Is there a way where I can bypass the vari belt
drive
on my mtd or is it better to put a different transaxle in it and go from there?

Most folks will probably tell you that the best thing to do is swap in a geared transaxle. With your current setup, you only actually have a single forward speed, and the vari-
drive
takes care of the rest.

I swapped mine for a 5 speed transaxle. Here's a write up on it.

you can just run a belt to the tranny, lift it so it lines up, make a cluch.
